Lentil Soup - Sweetest of Delicacies


A delicious warm Lentil soup for these cold winter days

Lentil Soup

 

Lentil soup is one of my favorite soups, especially during cold winter days. Known as the “sweetest of delicacies” by the ancient Greeks, lentil soup is very nutritious and this vegetarian recipe is easy to make. 

 

Ingredients:

 

1/3 cup canola oil

 

1 large white onions, finely chopped

 

2 garlic cloves, finely chopped

 

2 cups dry orange lentils, rinsed thoroughly

 

5 tbsp basmati rice, rinsed thoroughly

 

7 cups water

 

1 tbsp vegetable or chicken stock powder

 

1 tsp salt

 

1 tsp black pepper

 

juice of 1 lemon

 

½ cup fresh parsley, finely chopped, for garnish

 

Preparation:

 

Heat oil in a wide, deep, non-stick pot on med-high heat. When hot, add onions and stir occasionally for 5-7 minutes or until onions are slightly golden. Add garlic and stir for another 1 minute. Add lentils and stir. Add water, stock powder, rice, salt, black pepper and stir well. Bring to a boil, cover pot and continue cooking for 30-40 minutes on low/simmer heat (stirring occasionally). Add lemon juice. Garnish with chopped parsley.

 

Note:

 

For reheating soup a day later, water needs to be added to the soup while heating on stove.
