Nutmeg adds richness to this delectable side dish. Your kids will be licking their plates to the last drop (and it's just so good that you might do the same)....


Bake Time: 1 hour


Serves: 4




2 Sweet Potatoes


1 tablespoon olive oil


2 tablespoons margarine


1/4 teaspoon nutmeg


1/2 teaspoon salt






1. Preheat oven to 425 degrees


2. Peel sweet potatoes


3. Slice sweet potatoes into 1/2 inch thick slices


4. Spread evenly on pan


5. Drizzle with olive oil and toss with hands to ensure even distribution


6. Bake in oven for 45 minutes to 1 hour or until potatoes are soft enough to mash


7. Remove from oven and transfer into big bowl


8. Add margarine and begin mashing


9. Add nutmeg and salt


10. Mix
