Denver Bagel Shop Offers a Fresh Take on "Smoked" Salmon

Discussing marijuana and its various applications within the Jewish space has become rather commonplace recently. And now, a new method of extracting and distributing the recreational drug will no doubt have our Jewish audience more excited than ever for brunch with Bubbie and Zaidy.

A bagel shop in Denver, in celebration of the unofficial stoner holiday of April 20, has taken infused cannabis products to a whole new level, infusing their in-house smoked salmon with cannabis oil. That's right: Joshua Pollock, owner of Rosenberg's Bagels, and his self-proclaimed "salmon messiah" general manager Nicky "The Fish" have created what is likely the world's first cannabis-lox.

Following Colorado's recent legalization of the consumption of recreational cannabis, Pollock and Nicky decided to combine two of their favourite passions in life: smoked salmon, and marijuana.

In order to create this unique product, medical marijuana was infused into an alcohol using a common household process to create what is called a 'tincture', an alcohol infused with cannabis. The tincture, once completed, was spread over the salmon, and was left to cure for 72 hours. Finally, the fish was smoked, and the result was a smoked salmon that was infused with cannabis.

Although tinctures allow the creation of unique edible cannabis products, it is not a recommended method of ingesting cannabis, due to the inconsistencies in strengths of tinctures, as well as the inability to test the potency of the final edible product.

Although the salmon would have no doubt been a hit among customers to Pollock's bagel shop, Colorado state law strictly limits what type of edibles can be sold in shops, based on the amount of cannabis used in the product, and the strength of the edible. Thus, although this smoked salmon would have likely sold out within minutes, in order to stay on the right side of the law Pollock only created the salmon for personal use.

But do not fear: a video describing how to make the salmon was posted by Pollock, so all you cannabis enthusiasts at home can enjoy what will surely be one of the craziest brunches of your life.
